Supporting Personal Health, Animals, and the Environment

I have been eating meat-free since I was 8 years old and found out chicken nuggets were made of chickens. Since then I have chosen to not eat chicken nuggets and other meat products for that same reason - I don’t want to eat any animal, in addition to environmental, ethical, health, and personal taste reasons. ​Plant based diets are becoming increasingly popular, and it is much easier to have quality meals anywhere I am than it was when I began eating a vegetarian diet. Resources like Compassionate Action for Animals, a Twin Cities based organization, have helped me to embrace this lifestyle without many issues.​ Happy Cow has been helpful to me when traveling to find veggie friendly eating options anywhere. Plant based meals are a simple way to generate positive change by reducing animal cruelty and supporting our earth with more sustainable farming practices. Although it may seem daunting to ensure the body has enough nutrients without meat, there are many great food options for a healthy, veggie based life.


As a long-time vegetarian, I’m often asked if I have any tasty and nutritious recipes I can recommend, so I thought this would be a good place to share them! I created the nutrition labels to provide some insight on the recipes’ nutritional content, but these are just guides to the nutrition content and haven’t been validated for accuracy in a lab.
